This is column M from the workbook: each day's bar is the running total of actual sales minus the plan. Above the line the month is ahead, below it the month is behind, and the last bar is where things stand right now.

Outside the register
Wholesale and invoiced work billed through QuickBooks instead of Toast. Entries here count toward the day's sales and the build, so the over/under stops understating invoice-heavy days. The live version pulls these from QuickBooks automatically; until then, log them as they are sent.

Built from the AM and PM columns already being logged every day (cutoff 11:00 AM). Averages are per open day this month, so a Tuesday here means "a typical Tuesday."

Labor
Daily labor is burdened at 10% and held against the day's budget. Because Foundry bakes to stock (a heavy pan-and-cookie day is building inventory, not chasing that day's sales), the honest creep detector is the trailing 7 day labor percent, not any single day. Once the Toast connection lands, hours split into service vs production by job code and each gets judged on its own terms.

The month starts with 23% of projected revenue to spend on product. Every order placed draws it down. The balance line should stay above the even-pace line; below it means the food money is going out faster than the month is going by.

The whole year
One month doesn't make or break the year, so this tab keeps score across all twelve and points forward: what the rest of the year needs to do for the goal to still happen. Costs stay off this page on purpose, they aren't controllable after the fact; this is the revenue pace view.
